Calling all soup recipes
First of all, the cauliflower soup was amazing. D approved it, and I loved it too. I won’t be making it too often because of the cream/milk content, but for a winter dinner it was awesome. I wonder if I can find a way to make it healthier?
I want to find a good healthy soup recipe. My friend Jenn makes a butternut squash soup, and it sounds pretty healthy. I might try that in a couple weeks.
I could also try to adapt my vegetarian chili recipe to make it more of a soup consistency. It’s fantastic as a chili, and I think it would make a good soup as well.

The best part about making soup last night? I don’t have to cook all weekend!
I’m going to vacuum the floors today and do some laundry. I want to have a relaxing day after such a busy day yesterday. Then, tonight we will probably watch a movie or play games!

My mom makes this tortilla soup recipe and my dad (who is diabetic) loves it!
2 tbsp olive oil
1 medium onion, diced
4 cloves garlic, minced
4 tsp chili powder
2 10oz cans Rotel
2 8oz cans tomato sauce
1 qt chicken broth
1 16oz pkg of frozen corn (you don’t have to use the whole bag if you’re not a corn person)
1 15.5oz can black beans (mom uses two cans)
4 cups shredded cooked chicken
1/2 cup chopped fresh cilantro (optional)
Heat oil in large soup kettle over med-high heat. add onion; saute til tender (approx. 4 mins). Add garlic cloves, chili powder; saute 1 min more. add Rotel, tomato sauce, broth, corn, beans, and chicken; bring to simmer. reduce heat and simmer partially covered about 20 mins to blend flavors. Serve warm with chips. After cooling it can be refrigerated up to three days or frozen for later.
1 cup serving: ~175 calories, ~19.2 g carbohydrate, ~4.4g fat, ~17.32g protein
This makes about 8-10 servings so you have lots left over for quick meals! I like it because you could easily add more things that you like or not use things listed that you don’t like. Hope things are going well!
I have a mashed potato soup, a french onion soup and a tomato soup that I make fairly often. None of them are terrible as to fat content. Let me know if you’d like to try them and I can email you the recipes.

I changed it to cut down on the calories and fat. Left out the wine and butter and used skim milk instead of heavy cream, used 98% fat free chicken broth, etc. It turned out great! I toasted some 1pt sandwhich thins to dredge in it.
